Director of Industry Outreach for Fermentation Science and Technology degree program

Jeff has lived all over the country but has chosen to set down roots in Fort Collins; where he completed his graduate work developing a rapid detection test for Listeria monocytogenes. Rather than focusing on the “bad bugs,” Jeff decided to follow his passion for the good organisms that ferment food and beer. Before getting involved with the FST program, he oversaw the startup of the biotech company MSBiotec, including the production facility and laboratory. He is presently involved in the “startup” of the FST program where his overarching goal is to help bridge the gap between academia and industry. When not working on that, he enjoys spending time with his wife and kids as well cycling, climbing, and a host of other outdoor activities. Jeff has been with our department since 2013.

Jessica was born and raised in Wisconsin. She moved to Colorado in 2009 to pursue a graduate degree. She has a B.S. in Economics and German and obtained her M.A. in German Language/Culture in 2007 with a M.S. in Human Nutrition in 2013. Before joining our department as a Research Associate, she was a Research Manager for an international market research firm in Chicago, IL. Jessica has been with our department since 2013.

Shelby Cox, MS, RDN
Research Associate II- Kendall Reagan Nutrition Center

Shelby was born and raised in southern Idaho. She attended the University of Idaho for a B.S. in Family and Consumer Sciences where she also completed her dietetics internship. She became a Registered Dietitian in 2013, then moved to Fort Collins to pursue a Masters in Nutrition at CSU, which she completed in 2015. From 2013-2017, Shelby served as dietitian and practicum coordinator for the Kendall Reagan Nutrition Center (KRNC). She is currently the Associate Director of Clinical Services at the KRNC, where she specializes in food allergies and intolerances and adult weight management.

Fermentation Science and Technology Lab Manager

Katie grew up in Lancaster, Pennsylvania and although the rolling hills of Amish country were nice, the Rocky Mountains had a stronger pull. She transferred to Colorado State University in 2008 and received a Bachelor’s of Science in Environmental Health in 2011. After a spring of working in the EH field while volunteering at Fort Collins Brewery, I decided to change course and pursue a position in the brewing industry. In the summer of 2012 I started employment at Oskar Blues Brewery as a lab technician and shortly moved into the manager position which I held until February of 2016. I am also a member of the Master Brewers Association of America Board for the Rocky Mountain District 2014 to present, where the goal is to provide local educational opportunities for the brewing industry.

Kalyn Garcia, MS, RDN
Research Associate II- Kendall Reagan Nutrition Center

Kalyn was born and raised in Newbury Park, California. She moved to Fort Collins in 2005 to pursue a B.A. in Journalism and started her career in public relations. Years in journalism led her back to CSU to pursue an M.S. in Food Science and Human Nutrition. Kalyn completed the CSU dietetic internship in 2016 and landed at the Kendall Reagan Nutrition Center shortly after. She has been a CSU Ram since 2005, but officially joined our department in October 2016. Now working as a registered dietitian nutritionist, Kalyn develops and presents various KRNC nutrition programs and provides nutrition counseling in specialized areas including cardiovascular disease and diabetes prevention and management; prenatal, pregnancy and breastfeeding nutrition; weight management, sports nutrition and more.

Ruth Inglis-Widrick
Research Associate II

Ruth was born in rural Indiana and grew up in Indiana, East Chicago, IL and Ellington, CT. She has lived in Massachusetts, Pennsylvania, Oklahoma, Rhode Island and Virginia. She and her husband moved to Fort Collins in 1989. Ruth has a B.S. in Dietetics from CSU and M.S. in Exercise Science and Nutrition. She was licensed as a Registered Dietitian (RD) through CSU’s internship program in 2006. Ruth has been with our department since 1999.

Research Associate

Morgan grew up in Arvada, Colorado. She went to the University of Puget Sound for her B.S. in Molecular Cellular Biology and International Political Economy. Morgan worked at a non-profit health advocacy organization in Washington, D.C. for a year before attending the Johns Hopkins Bloomberg School of Public Health, where she obtained a MSPH in Human Nutrition. Morgan joined our department in January 2016.

Katie was born and raised in Loveland, CO. She has a B.A. in Kinesiology and a M.S. in Food Science & Human Nutrition from CSU. Her husband also works for CSU as a Manager in Housing and Dining. She and Joe have one son, Wyatt. Katie has been with our department since 2006.

Brigid was born in Pennsylvania and moved to Colorado in 2000. She has a B.S. in Nutrition and Dietetics from Marywood University in PA and a Masters in Public Health from the Colorado School of Public Health at CU Denver. She has spent the majority of her career working as a nutritionist in community health. She joined CSU Extension as a Nutrition Educator for the EFNEP program as well as a CSU Extension Agent. In June of 2015, Brigid joined our department continuing her work with EFNEP as a Research Associate and Project Manager for RNECE-West. She has been with CSU since 2003.

Michelle was born and raised in Wisconsin, and received both her B.S. in Dietetics and her Registered Dietitian credential from the University of Wisconsin-Madison. She moved to Colorado in 2007 to pursue her M.S. in Food Science & Human Nutrition at CSU. As an RD she has worked in a variety of clinical, community, and education settings. Michelle has been in her current role with the department since 2016.

Melissa grew up in Florida. She received a B.S. in Food Science and Human Nutrition from the University of Florida. Upon graduation, she moved to New York City to complete her dietetic internship and M.S. in Clinical Nutrition at New York University. Melissa’s professional experiences include working as a clinical dietitian, school-based nutritionist, and program manager for a school-based obesity prevention program. Melissa completed her PhD in Public Health at NYU and moved to Fort Collins to begin her postdoctoral work. Melissa has been with our department since 2015.

Josh grew up in Longmont, Colorado before attending Colorado State University in 2002 where he earned his B.A. in Liberal Arts/Political Science in 2006. He is currently in the final phases of his Masters in Adult Education and Training at Colorado State University. He accepted the position of restaurant operations instructor at the Aspen Grille in September of 2014. Josh has worked nearly every position in the restaurant industry including 5 years of front of house management at the Stonehouse Grille in Fort Collins.

Elisa was born in Hollywood, CA and grew up in Manitou Springs, CO. She received her B.S. in Foods and Nutrition, Vocational Home Economics Education from CSU. She graduated with a M.S. in Agriculture with a Workplace Mediation Certificate. Before joining us at CSU, Elisa worked at K-State as an Agronomy Research Scientist and Extension Director. She loves sharing CSU’s incredible resources with the people of Colorado. Elisa has been with CSU since 2000.

John was born in Pennsylvania. He received a B.S. in Nutrition, in Ohio and a M.S. at the University of Incarnate Word, Texas. He served in Peace Corps in Papua New Guinea Institute of Medical Research after graduate school. After the Peace Corps John worked for the USDA as a Nutritionist working on large-scale food consumption surveys in Washington DC. He moved to Colorado to work as a Research Associate in the FSHN department as an IT Manager and Instructor. John has been with CSU since 2000.
